Boxing-themed Culinary Battle Royale ends in a split decision

Annual cook-off pits executive chefs against Lynn’s president and dining manager

Who reigned supreme at Lynn University’s third annual Culinary Battle Royale, Rumble in Raton?

Sodexo Area General Manager Brian Bowser and Lynn President Kevin M. Ross (the reigning champs) duked it out with Sodexo Executive Chefs Greg Bibb and Joe Phillips.

“It’s one of the most exciting and delicious days of the year, where our partners at Sodexo can show off their talent and competitive spirit,” said President Ross.

Both teams went the extra mile to win the votes of hungry students and employees lunching in the Elmore Dining Hall and the panel of guest judges invited to weigh in on the featured menu items.

This year, in addition to the “popular” vote by students and employees in attendance, some of Sodexo’s meat, baked goods and produce vendors represented a collective “professional” vote.

And it’s a split decision. Team Bowser/Ross won the popular vote 216 to 113 in the boxing-themed showdown featuring American flavors, and the guest judges sided, unanimously, with Team Bibb/Phillips.

But the real winners were all those who sampled the delectable fare produced by both teams.

Team Bibb/Phillips prepared such delicacies as pulled emu, sliced bison ribeye, St. Louis pork ribs, “Split Decision” Atlantic smoked salmon with Nantucket scallops, Northwestern “Kiss the Canvass” chicken wings, grilled Guinness and Bass Ale halibut with crispy shrimp, grilled bison sliders, “Southpaw” soft shell crab brioche sliders, crispy Walla Walla onions and “Low Blow” wild boar chili.

"The 2018 Chef Battle Royale was truly an amazing experience," said Chef Bibb. "Being able to work with all the company chefs, putting out superb foods for an extraordinary dining experience, and still competing at a extremely high level and have fun with it is what drives the culinary in all chefs."

Team Bowser/Ross served up 18-hour smoked black pepper brisket with sweet potato mustard BBQ, Kevin O’s chicken and waffles salad, Fresh Prince West Philly cheesesteak sandwich, Boston lobster rolls, San Bernadino spicy California hand rolls with wasabi crema, classic cioppino with clams, mussels, shrimp and halibut, crawfish mac ‘n’ cheese, Wisconsin ale cheese soup, Mississippi whoopie pie, Kings of Florida Key West lime tarts and deconstructed s’mores.

Culinary Battle Royale is one of several special events held by Lynn’s dining program that is managed by Sodexo, a leader in Quality of Life services and a partner to more than 850 colleges and universities in the United States and Canada.
