Lynn’s chef-in-residence offers tips for staying healthy this holiday season

The holidays are filled with sweet temptations but you can’t abandon a healthy lifestyle

The holiday season is a time to celebrate, spread joy, give gifts and attend parties, but with celebrations often comes an abundance of delicious foods and sweet snacks. Lynn University’s chef-in-residence, Craig Schmantowsky, has more than 15 years of experience and has been training Lynn students in the College of Hospitality Management how to prepare a variety of dishes since 2003.

“To cook healthy use butter and oil sparingly,” said Schmantowsky. “Also, stay away from hydrogenated oils and watch for the hidden fats in red meat.”

5 ways to stay healthy:

  1. Eat before the party so you won’t consume too many high-calorie foods and appetizers.
  2. Drink a glass of water after each alcoholic beverage. Some drinks have more than 200 calories per serving. Drinking water will help you stay full and reduce your calorie intake.
  3. Eat several small meals throughout the day, rather than three large meals.
  4. Fill up on salads and greens before your main entrée, but remember to use dressings sparingly. Red wine vinegar is a good substitute since it doesn’t have any calories.
  5. Choose the furthest-away parking space. The more exercise you get, the better.

Even though the holiday season is filled with sweet temptations, Schmantowsky says it’s important to adopt a lifestyle you believe in and can stick to. “A healthy lifestyle is just that – a lifestyle. You will be amazed by how easy it is to lose weight once you’re committed to living healthy.”

Schmantowsky is the chef-in-residence in Lynn University’s College of Hospitality Management. He has more than 15 years experience in the food service industry working as a baker, pastry chef and as an instructor at universities including Keiser College and Johnson and Wales University. Schmantowsky came to Lynn in 2003 and spearheaded Lynn’s culinary program. He teaches courses on food production, food service sanitation, convention management and security management, among others.
